What I spend my time on.

Something that's been taking up a lot of my time recently is my foray into the dark world of law school admissions. Read more about my journey to become a lawyer here.

It makes me pretty unproductive at work/home when I'm glued to the computer, praying for an update in my status checker. If you're a student wanting to be a law student, definitely take some tips from my other blog. It will make you a happier, less-neurotic person.

As opposed to a nervous wreck every single time you get a new email.

I like to be liked. There's nothing wrong with that.

So, in order to be universally adored by my coworkers (HA!), I've taken to baking cupcakes on Sunday nights to take in on Monday mornings for everyone. I'm a pretty bomb cook, so I think it's fair to say that my office is the hub of social activity at my law firm from 9:15 to lunch on Mondays. And that's just how I like it.


This week, in honor of Christmas, I made some deeeeeee-licious red velvet cupcakes with a vanilla cream cheese icing. Here's the recipe:

Cupcake:
  • 2 1/4 cups flour, sifted
  • 1/2 cup cocoa powder, unsweetened
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup butter, softened
  • 2 1/4 cups sugar
  • 4 eggs, room temperature
  • 1 cup sour cream
  • 1/2 cup buttermilk
  • 1 bottle (1 oz.) of red food coloring
  • 4 teaspoons of vanilla extract
  1. Preheat the oven to 350 degrees.
  2. Mix flour, cocoa, baking soda, and salt together in a medium bowl. Set aside.
  3. In a large bowl, beat together butter and sugar with an electric mixer until fluffy -- about 5 minutes. Add the eggs, one at a time, mixing thoroughly after each addition.
  4. Mix in sour cream, buttermilk, food coloring and vanilla.
  5. Gradually add the flour mixture, stirring until just blended.
  6. Spoon the batter into the lined tins. Do not overfill, about 2/3 of the way full is good.
  7. Bake for about 20 - 25 minutes, or until a toothpick inserted into the cupcake comes out clean. Allow to cool for ten minutes in the tins and then another 20 minutes on racks before icing.
The icing is the best part of cupcakes, obviously, and this recipe is yummy. It's a vanilla cream cheese icing (which I dusted with red and green sugar for a holiday feel, on top of the red cupcakes. Darling!). Here's a recipe:

  • 8 oz package cream cheese, softened
  • 1/4 cup butter, softened
  • 2 tbsp sour cream
  • 2 tsp vanilla extract
  • 16 oz package powdered sugar
  1. In a large bowl with an electric mixer, beat together cream cheese, butter, sour cream, and vanilla until fluffy.
  2. Gradually beat in powdered sugar until smooth.
I found that I needed double the frosting recipe to frost 40 cupcakes. The cupcake recipe makes 30 cupcakes. Do the math. It's maddening enough to make someone turn into Steve Martin in "Father of the Bride." You know the scene I'm talking about, I know you do!

Decided to start a blog, just to say what's up. Was considering a tumblr account, but I already have three other twenty-something themed blogs here. May move it over in a bit, we shall see.
